Edible glitter for cakes should highlight the shape of the dessert, not cover up the pastry chef’s work. The result depends on the surface — icing, ganache, cream or chocolate — and on when you apply it. A single, well-placed area of shimmer often looks cleaner and more upmarket than a cake smothered in glitter.

Adapting the technique to the surface

A smooth ganache or icing easily takes a spray finish if its surface is stable. A very moist cream can make the product gather in patches. On chocolate or a dry pastry, powder goes on more precisely with a food-only brush, or on a slightly tacky area.

Do a test before the final cake. Look not only at the colour straight away, but also at how it changes after refrigeration. Some surfaces darken, sweat or slightly absorb the finish. The best time to apply it therefore depends on the product and on how the delivery is organised.

A professional finish with very little product

Choose one visual line: the top edge, a gradient down one side, the centre of a flower, the base of the cake or a detail in the lettering. Sticking to it keeps the design clean and easy to read. Add the glitter gradually and stop as soon as the area catches enough light.

For a tiered cake, repeat the same detail on each tier rather than changing colour. Gold, silver and rose gold work as accents; blue, purple or red suit a bolder theme. Keep the other decorations more understated.

Loose powder or edible spray

Powder suits lines, small areas and blending shades. It needs a light hand and dry tools. A spray gives more even coverage, but you need to control the distance and protect the surroundings. The two formats are not mutually exclusive: they can be used on different areas of the same dessert.

Never swap an edible product for craft glitter. A decorative or “non-toxic” label does not mean the product is intended to be eaten. The packaging must clearly state its intended use and its ingredients.

Transport, storage and cutting

A successful decoration has to survive the journey. Place the cake in a box that does not touch the finished areas and avoid temperature changes that cause condensation. If the finish is fragile, bring the glitter separately and add the final touch at the event venue.

Think about cutting too: a large, heavily covered area can transfer onto the slices and plates. A light dose stays cleaner. Let whoever is serving know that the decoration is edible, and keep the allergen information for the product used.
