Here on the Riviera, the Spritz is practically a religion. But don’t you think we’ve had enough of the “tired orange slice and plastic straw” combo?
So here’s my perfect recipe and, above all, my secrets for making this classic totally Instagrammable and spectacular.

1. My “Perfetto” 2.0 Spritz Recipe
Since that’s why you’re here, let’s not waste any time. Here’s my favourite base, the one that perfectly balances bitterness and bubbles.
Ingredients: For a Spectacular Spritz
- 6 cl Aperol (or Campari for more bitterness)
- 9 cl Prosecco (well chilled; choose an “Extra Dry”)
- A splash of sparkling water (Perrier-style)
- Plenty of ice cubes (the secret to avoiding dilution)
- 1 Dehydrated Orange Slice (natural elegance)
- 1 spoonful of Citrus Pearls (the sensory twist)
- Edible flower petals (the poetic touch)
- Blue Flash Paper (for the final show – external use only)
Pour the Aperol after the wine for a natural blend
Method: The Show in 30 Seconds
The Aperol sinks on its own, creating a gradient without breaking the bubbles.
Light a strip of flash paper next to the glass as you serve!

2. The “Haute Couture” Look with Dehydrated Oranges
For my events, I’ve ditched fresh fruit in favour of dehydrated oranges. The ones I found are hand-cut in the Basque Country. They’re 100% natural, with no added sugar, and the result is simply stunning: a thin, rigid slice that floats elegantly and releases concentrated aromas without diluting your cocktail. It’s the small detail that turns an ordinary glass into a cocktail worthy of a luxury hotel. Plus, they keep for 12 months, so no more waste!

2. A Burst of Flavour with Citrus Pearls
If you really want to impress your friends or customers, forget the classic syrup. I’m going all in on spherification. Imagine little pearls that look like caviar but hide an explosive heart of citrus juice.

I add a spoonful on top of the Spritz. As your guests sip, the pearls pop on the tongue and liven up the sweetness of the Aperol with a fresh kick of lemon or orange. 🍊
The ultimate sensory experience:
- ✨ Visual & modern: An irresistible “fruit caviar” look
- 💥 Incredible texture: A burst of juice in every sip
- 🔄 Interactivity: Your customers become part of their own tasting experience
Cost-effective? The 180 g jar contains about 160 pearls, enough to jazz up quite a few rounds to remember!

4. The Poetic Touch with Flower Petals
The Spritz is the cocktail of gardens, terraces and freedom. To accentuate that “Dolce Vita” feel, I sprinkle my creations with an Extra Dry edible petal blend (rose, cornflower, marigold).

It’s 100% French, packed in an ESAT (a French sheltered workshop), and it gives your glass incredible flair. It’s delicate, it floats between the bubbles and it adds a unique floral note. 🌸
Why we love it:
- 🇫🇷 Local know-how: Responsibly made in France
- 🤝 Social impact: A socially responsible product packed in an ESAT
- 🌿 Breaking the mould: A floral touch to lift the cocktail out of the ordinary
It’s ethical elegance within reach, and believe me, it’s the detail everyone photographs before even taking the first sip! 📸

5. The Grand Finale… Blue Flash Paper!
Right, now we’re moving up to “Wow” level. Want the whole bar to turn around when you serve your drinks? That’s where Flash Paper takes the stage.
At my last professional event, I cut thin strips of blue flash paper (the colour of the Mediterranean!). A little spark as you serve and… Poof! A bright flame that vanishes without a trace. ⚡
The pyrotechnic show:
- 🔥 Theatrical: A lightning-fast flare that mesmerises customers
- 🎭 Immersive experience: The cocktail becomes a true show
- 🧹 Zero trace: No residue, no smell, just magic
⚠️ The treasure hunter’s advice: Never put it in the glass! It’s a purely visual effect next to the cocktail to create visual impact.
The treasure hunter’s verdict:
The Spritz isn’t dead, it’s reinventing itself
By combining the quality of a dehydrated orange, the fun of citrus pearls and the poetry of flowers,
you’re no longer serving a drink, you’re offering a memory:
• It’s cost-effective: A few pearls are enough to raise the perceived value of your menu.
• It’s professional: You show mastery of textures without complicating service at the bar.
• It’s memorable: Your customers will come back for this unique visual and taste experience.
