⏱️Estimated reading time: 4 minutes

Wafer paper, also called edible wafer sheet, is a very thin sheet you can eat. You know it from the base of nougat; today it carries a photo, a logo or a name on a dessert… and even on a cocktail.

“I travel the world to find what makes a drink or a cake unforgettable. Wafer paper is one of those little secrets that changes everything: light, discreet and able to carry any image.”

The essentials in 3 points
  • Wafer paper is a very thin edible material with an almost neutral taste.
  • On a drink, it floats on dense foam: that’s the drink topper.
  • On a cream cake, the icing sheet is preferred, as it is more opaque and more stable.

What is wafer paper?

In French it is called “azyme”, meaning “unleavened”. Wafer paper is an extremely thin sheet, generally made from starch, water and a little vegetable fat, then dried. The result: a white, slightly translucent sheet with a very subtle taste that slowly melts on contact with moisture.

The exact composition varies from one manufacturer to another. For our toppers, the ingredients and allergens of the material are always given to you before you order.

Wafer paper, rice paper, edible wafer sheet: what’s the difference?

None! They are different names for the same material. “Wafer paper” is simply the most common name in baking tutorials. However, don’t confuse it with the icing sheet, a different material we compare in our wafer paper or icing sheet guide.

On a cocktail: the drink topper

This is the most spectacular use. Printed and then cut into a disc, wafer paper lies flat on the foam of a drink: a cocktail made with egg white or aquafaba, a frothy mocktail, a café crème, a well-headed beer. Allow about 15 to 30 minutes of good visual hold, as a guide: it all depends on the foam, the drink and the humidity. Just avoid direct contact with ice cubes.

Two diameters are offered in our simulator: Ø 6 cm and Ø 12 cm. Another size? Just mention it in your quote request.

On a cake: possible, with a few precautions

Wafer paper is translucent and sensitive to the moisture of a cream: placed on whipped cream or a pastry mousse, it can wrinkle. For a personalised cake, we therefore prefer the icing sheet, white and opaque, which makes the colours of a photo stand out. Wafer paper remains perfect for “dry” decorations: biscuits, shortbreads, macarons, nougats, cut-out decorations.

Our tips for a successful application

  1. Keep the sheets dry, flat, in their well-sealed bag, away from light and heat.
  2. Handle them with dry hands: the slightest drop of water leaves a mark.
  3. On a cocktail, build a very dense foam, then place the disc flat without pressing.
  4. Serve immediately: that’s when the effect is sharpest.
  5. On a biscuit, place the sheet on icing that is still slightly moist or on a thin layer of glaze so that it sticks.
Good to know

Choose a sharp, high-contrast, high-resolution image (PNG or JPG). On a 6 cm disc, tiny details are less visible: go for a design that reads at first glance.
