Fee Foam: what it is and how to use it for egg-free cocktail foam

⏱️Estimated reading time: 4 minutes

Fee Foam is a foaming agent for cocktails: a few drops are enough to get the white, silky foam of a sour… without cracking a single egg.

“In the bars I visited this year, the same little bottle kept turning up behind the counter. Bartenders love it for a simple reason: the foam looks great every time, and nobody has to separate an egg white in the middle of a rush.”

What you need to know before pouring your first drops

Egg-free and neutral

Colourless and tasteless: the foam masks neither the aroma nor the colour of your cocktail.

2 to 3 drops, a vigorous shake: a stable foam, service after service.

  • Use 2 to 3 drops per cocktail, no more.
  • Egg-free, it suits vegan guests and those who avoid eggs.

What exactly is Fee Foam?

Fee Foam is made by Fee Brothers, an American company known to bartenders for its bitters and syrups. The label spells out the promise: “A Non-Egg Alternative for Shaken Drinks”.

It is a colourless liquid, sold in a 150 ml bottle. Once shaken with the cocktail, it traps air just as an egg white would: the drink is covered with a fine, white, stable foam.

What’s in a bottle of Fee Foam?

Its formula is based on water and a food emulsifier (polysorbate 80), with preservatives, a little citric acid and lemon extract. No animal-derived ingredients: that’s what makes it a vegan alternative to egg white. The complete, up-to-date list is on the bottle label: that is the reference.

How to use Fee Foam, step by step

  1. Prepare your cocktail in the shaker: spirit, fresh citrus juice, syrup.
  2. Add 2 to 3 drops of Fee Foam. Adding more doesn’t improve the foam.
  3. Shake vigorously with ice for 10 to 15 seconds. For an even thicker foam, do a dry shake first: a few seconds without ice, then with.
  4. Strain into the glass, ideally with a fine strainer for a perfectly smooth foam.
  5. Let it rest for a few seconds: the foam rises and smooths out. Garnish it, or print on it.
The right dose

Start with 2 drops for a single cocktail. Go up to 3 drops if the recipe contains a lot of juice, or if you want a dense foam to print a logo on. For a large batch prepared in advance, add the drops when shaking, not to the bottle.

Which cocktails can you make with Fee Foam?

All cocktails that are shaken and benefit from a foam:

  • Sours: the whisky sour, the pisco sour and the amaretto sour.
  • Fizzes: the silver fizz, a gin fizz with added foam before topping up with soda water.
  • Frothy classics: pink lady, clover club, daiquiris.
  • Coffee cocktails: a few drops make the foam of an espresso martini denser.
  • Mocktails: an alcohol-free sour (lemon, syrup, iced tea or apple juice) foams just as well.

The basic sour, endlessly adaptable

  • 5 cl of spirit (whisky, gin, rum, pisco…)
  • 2.5 cl of freshly squeezed lemon juice
  • 2 cl of sugar syrup
  • 2 to 3 drops of Fee Foam

Shake with ice, strain, serve. Change the spirit and you change the cocktail.

Alcohol abuse is dangerous for your health; drink responsibly.

The ideal surface for printing on a cocktail

A food printer deposits edible ink on the surface of the drink. For a sharp result, it needs a foam that is flat, dense and free of large bubbles: exactly what well-shaken Fee Foam gives.

Let the foam settle for a few seconds, then print a logo, a name or a photo with the portable Stylo Print or a foam printing machine. It’s the favourite combination of bars that personalise their cocktails at events.
